Carrot and Corriander ~ Quick Soup

Quick Soup and Massively Yummy ...

Large bag Carrots
Large Potato / Large Onion
Stock Cube /Water
Lemon
Can Coconut milk
Half teaspoon Coriander [or fresh chopped]
Quarter teaspoon Curry Powder. Salt / White and Black Pepper.

Chop carrots, potato, onion.
Add to pan with stock cube, pint water, salt.
Cook
After 15 mins, add half lemon juice, pepper, corriander, curry
After 5 mins, taste and check seasonings.
Add coconut milk.
Simmer 5 mins.
Blend
Eat

    Serve with croutons
    Add Fresh Cream or a dash of milk...
